However, the fruit is highly perishable in nature and is mainly available only during the peak harvesting months of June, July, and August. Due to its short seasonal availability and limited shelf life, significant post-harvest losses occur every year, affecting both farmers and market supply. To address this challenge, value addition through dehydration and processing is essential for preserving the fruit and extending its availability throughout the year. By converting fresh Queen Pineapple into chemical-free dehydrated flakes and chunks, the project aims to retain the natural sweetness, aroma, and nutritional value while significantly increasing shelf life. This enables year-round market availability, reduces wastage, enhances farmer income, and creates sustainable business opportunities in the healthy snack and processed fruit sector. The initiative also promotes Tripura’s unique GI-tagged agricultural product in national and international markets through innovative and eco-friendly processing methods.
