FREEZE DRYING It is dehydration process of foods under vacuum so the moisture contains changes directly from a solid to agaseous form without having to undergo the immediate liquid state through sublimation. During and after the process original size, shape, color and natural ingredients are retained. Specialty of this method is removal of interstitial cell water without rupturing cell structure. Thus, all nutrients are kept as it is even after processing. The process is used for drying and preserving a number of food products, including RTE, RTS, Vegetables', fruits and instant coffee products. Depending on the product and packing environment, freeze dried fruits are self-stable at room temperature for up to 25 years and more if canned and between 6 months to 3 years if stored in poly bag container.
