Shri Dipenkumar Shah, as a farmer is involved in drumstick plantation since last 11 years. However, his entrepreneurship propensity, led him to think about value addition to this newly popular agri food commodity. He noticed that there is an increasing demand and growing awareness about functional food products. Drumstick provides a rich and rare combination of nutrients, amino acids, anti oxidants, anti aging and anti-inflammatory properties for nutrition and healing. The best way to utilise functional health benefits of drumstick is to make it a part of daily diet. It has ability to prevent as well as cure various diseases and malnutrition. The project concept is to formulate nutrient rich functional food products to combat various nutrient deficiencies among consumers. Drumstick powder can be utilized into various food products like chocolate, energy drink, energy bar, instant soup mixes and ice cream. These products can be served to various age groups. Using the laboratory and pilot plant facilities available with Food Processing Incubation Centre of Anand Agricultural University, drumstick powder enriched food products will be developed by standardizing the technology for mechanized production and packaging, and analysing those for micronutrients and other important quality parameters. Financial, technical and marketing support under the Startup Support Scheme of Govt. of Gujarat will help him to complete the remaining research for the development of these unique natural nutrient rich functional foods. The developed products will be a new approach for ensuring delivery of the goodness of natural nutrients of an underutilized plant to consumers facing problems of nutrients deficiency.
