Apong is a traditional drink of Assam. Its origin can be traced back to Vedic times. Unlike traditional drinks of other countries like wine from France, beer from Germany and Saké from Japan, the protocol for making this drink has not changed since ages and proper scientific study has not been done. Therefore, this drink has not been commercialized since it degrades within 48 hours of making the product. With the research that we have conducted in my lab at home, I have managed to preserve the drink for more than 5 months and have developed the prototype to preserve it like commercial wine or saké. The proto-type has been developed in the lab. Local people who have tasted the drink found that there was no change in taste from traditional drink and liked it very much.
