In their own words
We are working on commercializing Kanji, a plant-based, Indian traditional, probiotic beverage. Our product will address the need for more options of functional beverages in India, where the packaged, non-alcoholic drinks market is dominated by carbonates and from-concentrate juices. Our product will introduce novelty to the Kanji preparation process by extending shelf life, as well as enhancing the original sensory without use of artificial colours or flavours. We are currently experimenting with different variants consumed across north-west India.The beverage will also be a true competitor to Kombucha. We will also aim to develop variants for international markets in the long run; as USA and Europe both have strong markets for plant-based probiotics, such as Kombucha and Kvass, respectively. We have developed a clear product process and R&D strategy. We are also conducting lab tests and sensory profiling of samples. We have also studied the technical feasibility, including possible challenges and mitigation strategies. We also have a committed, multidisciplinary team, including food technologists and business graduates to work on the mission. The end outcome of our would be commercially ready Kanji variants.
