We are innovating process for increased shelf life of Kombucha in ambient room temperature, that also minimises the risk of airborne contamination on the beverages. With the rise of popularity of probiotic drinks and beverages, the traditional Kombucha is gaining a market demand. The biggest problem of most Kombucha is the shelf-life of the beverage is around 3 months. After which the taste of the drink starts to change and become sour. Therefore, it becomes very difficult for the retailers to sell the drink in the limited period of time. Introduction of wild and unknown bacteria during the manufacturing process is another problem which leads to fast degradation of the beverage and change of taste. Most manufacturers are not able to introduce accurate ratio of the yeast and bacteria in kombucha which leads to decrease in the shelf-life of the beverage and increase in alcohol content. If the alcohol content increase above 0.5%, it can lead to legal problems with authorities, which is one of the biggest deterrents for manufacturers.
