Mambally’s Royal Biscuit Factory, established in 1880 in Tellicherry (Thalassery), Kerala, is one of India’s oldest continuously operating heritage bakeries and the creator of the first plum cake recorded in Indian history in 1883. The company played a pioneering role in shaping Tellicherry’s identity as the “Land of Cakes, Cricket and Circus.” The startup specialises in premium heritage bakery products manufactured using a rare wood-fired baking process preserved across five generations. Unlike conventional industrial baking systems dependent on electric or gas ovens, Mambally’s utilizes traditional wood-fired ovens fuelled primarily by coconut shells, an agricultural by-product. This process requires specialised expertise in fire control, heat management, and artisanal baking precision, representing an indigenous manufacturing technology that is increasingly rare in modern food production. The company is focused on preserving, modernising, and commercialising traditional food manufacturing knowledge through sustainable heritage production, premium food innovation, digital commerce, and experiential tourism. By combining traditional manufacturing techniques with modern branding, quality systems, e-commerce, and scalable distribution channels, Mambally’s aims to create a globally recognised Indian heritage food brand. The start-up also plans to expand into premium heritage food products linked to the historic Malabar spice trade, including Tellicherry pepper, cardamom, cloves, and other regionally significant products, creating additional opportunities for farmer linkages, rural livelihoods, exports, and heritage tourism.
