The present project is entitled “An efficient way of consuming the Jamun Seed Powder (JSP)”. Using the tons/year of Jamun fruits entering into landfill, the aim of the project is to prepare a nutritional and ready to eat cookies out of jamun waste to cure the diabetes and achieve net zero waste. Jamun is a popular fruit consumed worldwide, due to its properties such as higher nutritional value, antioxidants, inflammatory, and antidiabetic etc. The ease of consuming Jamun seed powder is non-convenient for a longer period due to the non-acquaintance and non-acceptability of taste in the pure form. Therefore, keeping in the view of pandemic, innovation (swatch Bharat Abhiyan, Make in India) sectors of health and Ayurvedic food-based products, efforts have been made to develop an innovative and low-cost instrument (for mixing and crushing of seeds) as well as novel cookies by using waste jamun seeds that can serve as an alternative way to consume the JSP powder. This present proposal will be benefitted to small-scale industries (Startup, New Entrepreneurs, MSME (Bakery Shops), Ayurvedic etc.). The developed recipe will be benefitted to household people, diabetic patients etc. Apart from the developed recipe, the prepared cookies will have various advantages such as it increases the nutritional value, serve as any anytime snack, people can get recommended dose of JSP, suitable for all age group. The biscuits were designed in such a way that they can be consumed by both diabetic and non-diabetic patients at any time as a ready-to-eat snack. The overall outcome would be to treat waste seed that has been thrown away every year, leaving India free of waste to a nation without any health hazards.
