Our traditionally natural grindstone grinds the grain at a speed similar to hand grinding millsat an RPM of 40-60. This process involves low heat generation and ensures that there is nonutritional loss from the grain while processing the flour. In addition, stone-ground flour isusually coarser compared to commercial flourmills, therefore exposure to oxygen is less, and the nutrients remain in the flour for longer. It is very similar to how our grandparents ground their grain and got flour.
