Mission: Subko [ Subko Coffee or Subko Coffee Roasters or Subko Bakehouse] is the synthesis of a set of ideas centered around the following: speciality coffee rooted and indigenous to Asia, regional identity pertaining to the Indian Subcontinent, sustainable farming and coffee cultivation, utilizing the beautiful and high quality raw materials and ingredients that already exist in the Indian Subcontinent to create the highest quality artisanal, small batch roasted coffee and bread/ pastry products. Two Key Business Areas Craft Bakehouse: We will prepare carefully sourced, daily hand crafted artisanal bread and pastry products. We will strive to be the most visually stunning, detail oriented craft Bakery India has yet witnessed, and aim to utilize interest in our Bakehouse to power interest in specialty coffee, and vice versa. We will source ingredients as close as we can to 100% from India and the Subcontinent to shine light on the high quality producers of our region. This would include products such as Sourdough Loaves, Rye Loaves, Specialized Croissants, Almond Croissants, Pain au Chocolat, Cruffins, Cinnamon/ Cardamom/ Saffron Babkas and Buns, and Innovative Toasts to begin with. Speciality Coffee: At the core of our sourcing will be indigenous, single origin green bean coffee from across India and eventually the subcontinent (this may loosely include India, Bangladesh, Sri Lanka, Myanmar, Bhutan, Nepal). We aim to source coffee as sustainably as possible, and incorporate elements of a ‘social enterprise’ in our coffee model. This includes sourcing through ‘direct trade’ as frequently as possible to cut out middlemen and ensure more wages end up in the pockets of farmers and labourers at the plantation level. As speciality coffee aims to operate as per Speciality Coffee Association (SCA) standards, we commit to sourcing coffee from plantations and estates that are paying farmers and labourers fair wages much above commodity coffee prices. It also means that we will source whenever possible from biodiversity friendly plantations, wildlife certified plantations, and organically grown microlots. This also means our packaging will aim to utilize biodegradable materials to the maximum extent we can source from within India, and aims to eliminate single use plastic use for our B2C and B2B customers. To establish in India and the Indian Subcontinent’s indigenous speciality, small batch, traceably sourced coffee roasting company, brick and mortar café spaces and E-commerce based roasted coffee distribution (B2C and B2B). We wish to enable social impact as an inherent part of our business model by livelihood building of Indian and South Asian Coffee farmers through higher wages for higher quality coffee production, prioritizing environmental protections on estates we source from, and packaging as sustainably as possible. Scale: We wish to eventually bring forth sustainably grown, premier speciality coffee products from the Indian subcontinent region for citizens of the region first and eventually to coffee drinkers across Asia, Europe, the Gulf, Oceana, and North America. This may be done through exporting products from India or establishing roasteries and café spaces under the Subko brand in other countries after achieving needed scale in India primarily. Corollaries: In addition, we strive to launch the following as corollary services: - To impart training and relevant skills to all stakeholders in the coffee supply chain and building social impact for community regions and work as socio-economic projects for the future development. - To establish educational institutes for professional coffee roasting , brewing and other training including artisanal baking in multiple locations in India and abroad. - To promote Eco- tourism in India and the South Asia region showcasing coffee tasting, coffee growing and plantations and other experiences around coffee.
