A significant portion of the fruit, specifically the peel and core (approximately 30-40%), is considered waste after processing, leading to environmental challenges and lost economic value for local farmers. Concurrently, the Indian consumer market is witnessing a rapidly growing demand for natural, healthy, and functional beverages, with the probiotic drink market seeing a particular surge. Our Innovative Solution: Our startup, [Your Brand Name], addresses this dual challenge by pioneering the commercial production of TEPACHE in India. TEPACHE is a traditional Mexican fermented beverage, but we have innovated it for the Indian context. Our core innovation lies in: Upcycling Agricultural Waste: We source pineapple peels and cores—a zero-cost or low-cost raw material that is typically discarded—from local Kerala farmers and cooperatives. Natural Fermentation Process: Using a proprietary blend of wild yeast and bacteria native to the pineapple, combined with traditional Indian jaggery and spices, we transform this waste into a premium, live, probiotic-rich beverage.
