This authentic Indian khichdi is just as tasty as the Sai Prasadam Khichdi that is served at Shirdi, India. Shirdi Sainath Khichdi delivers authentic Indian khichdi. After soaking the rice and lentil mixture for five minutes in between 400 and 500 mL of water in a saucepan or pressure cooker, incorporate the masala and simmer the mixture over a medium flame for seven to ten minutes, or for two whistles if using a pressure cooker. Allow the pressure in the pressure cooker to release naturally, or bring the pot down to its regular eating temperature. Serve with ghee and pickle for a more complex flavour and aroma, and season with salt to taste. Rice, lentils, and vegetables farmed using organic methods are used in the preparation of the mix. It is a nutrient-dense meal supplement that can help prevent mothers and children from falling into a state of undernourishment. A significant number of pregnant women who live in rural areas do not have access to affordable or readily available sources of nutritious food.
